The Kai Tim Mälzer Kamagata chef's knife combines functional design, durable materials and minimalist aesthetics. Developed in collaboration with Tim Mälzer, the blade geometry was defined during a multi‑year process in Japan to deliver reliable cutting performance. This single‑piece kitchen knife pairs a 20 cm forged stainless steel blade with a polished, ergonomically shaped handle for balanced, comfortable use.
The 20 cm blade is forged from 4116 stainless steel with a hardness of 57 (±1) HRC, providing corrosion resistance and stable edge retention. The satin finish and Tim Mälzer signature on the blade create a distinctive, high‑quality appearance. The polished POM handle is water‑resistant, hygienic and shaped symmetrically for use by both left‑ and right‑handed cooks. The knife’s weight distribution between blade and handle supports smooth, controlled cutting.
Use the chef's knife for standard kitchen cutting tasks: hold the handle with a secure grip and guide the blade using a smooth rocking or forward slicing motion depending on the ingredient. For precise work, place the tip or middle of the blade on the cutting board and use controlled strokes. The symmetrical handle accommodates both left‑ and right‑handed techniques.
