The KAI TMK-0704 Slicing Knife (23 cm) from the Tim Mälzer Kamagata series combines a long stainless-steel blade with a polished finish and an ergonomically shaped black handle to deliver precise, controlled slicing. Developed with input from Tim Mälzer and produced using forged 4116 stainless steel, the blade features a characteristic sickle-shaped contour that supports smooth, accurate cuts. The polished POM handle is symmetrical for left- and right-handed use and provides water resistance and easy maintenance.
The 23 cm slicing blade offers excellent balance between blade and handle for steady, even slicing of meats, fruits and vegetables. Forged from 4116 stainless steel with a hardness of 57 (±1) HRC, the blade is corrosion resistant and finished with Tim Mälzer’s signature and satin polishing. The polished POM handle ensures ergonomic grip, ambidextrous use and hygienic, low-maintenance care.
Hold the knife by the handle with a secure grip and guide the long slicing blade in smooth, even strokes through the item being cut. For best results when slicing meats or roasts, let the blade do the work with minimal sawing motion, using the full length of the blade for each pass. Use a stable cutting board and support the food with the non-dominant hand while keeping fingers clear of the cutting line.
To preserve edge life, hand wash the knife with mild detergent and dry immediately. Regular honing and occasional professional sharpening will maintain optimal slicing performance. Avoid cutting on very hard surfaces such as ceramic or glass to prevent premature dulling.
