The KAI 6721D 21 cm kitchen knife from the Wasabi Black Series combines a corrosion-resistant polished steel blade with a water-resistant black plastic handle containing bamboo powder for a comfortable grip. The knife is intended for continuous kitchen use and offers a balance of durability, sharpness and minimalistic design inspired by Japanese communal kitchen tools.
The blade is made from newly developed 6A/1K6 stainless steel with a hardness of 56 (±1) HRC, providing sustained sharpness and corrosion resistance. The slightly arched spine supports secure hand placement and facilitates controlled rocking and slicing motions. The water-resistant plastic handle reinforced with bamboo powder delivers a pleasant, non-slip feel while remaining easy to clean and robust for daily use.
Hold the knife with a secure pinch grip near the blade for precise control; use the arched spine to support rocking motions on a cutting board for fine chopping. Use smooth, even strokes for slicing to preserve the blade edge and prepare ingredients according to recipe requirements. Avoid cutting on very hard surfaces such as stone or glass to protect the edge.
Hand wash and dry immediately after use to maintain blade condition and corrosion resistance; store in a knife block or on a magnetic strip to protect the edge. Regular honing and occasional professional sharpening will extend cutting performance.
