The KAI Shun Universal knife TDM-1722 features a 16.5 cm blade developed for versatile kitchen tasks. Drawing on the Shun Premier Tim Mälzer Series design, this knife combines a hard VG-MAX steel core wrapped in 32 layers of Damascus with a hammered Tsuchime finish and a highly polished cutting edge, paired with a medium-brown grained pakkawood handle. Its construction aims to provide sharpness, durability and balanced handling for both professional and home kitchens.
The blade’s VG-MAX steel core and multilayer Damascus cladding deliver a balance of hardness and flexibility that supports long-lasting edge retention and reliable cutting performance. The hammered Tsuchime surface reduces friction and helps release slices from the blade for cleaner cuts. The lightweight, double-sided 16.5 cm blade enables precise, controlled cutting. The symmetrical, medium-brown pakkawood handle with a full tang offers stability and comfortable use for both left- and right-handed users.
Use the knife for slicing, dicing and chopping by employing a stable cutting surface and proper cutting technique. Hold the symmetrical pakkawood handle comfortably and guide the blade with controlled motions for precise cuts.
