Madeleine pan Lumarko de Buyer 4710.12 steel rectangular 260×200 mm is a 12-mould baking tray designed for producing individual madeleines and small sponge cakes. Manufactured from thick steel with a PFOA-free PTFE non-stick coating, the tray ensures even heat diffusion and consistent browning while supporting high baking temperatures up to 220°C. The rectangular format and arranged moulds promote hot-air circulation for uniform results in conventional ovens.
The steel construction provides rapid and even heat conduction, allowing juices and batters to caramelise for defined crust and texture. The PFOA-free PTFE coating facilitates easier release of pastries and simplifies cleaning while protecting the steel surface from oxidation. The heavy, thick-steel design improves dimensional stability and durability for repeated domestic or professional use.
Before baking, lightly grease each mould to improve release even with the non-stick coating. Place the tray on the middle rack of a preheated conventional oven and bake at temperatures up to 220°C according to the recipe. Avoid inserting metal utensils into the moulds to protect the PTFE surface. After baking, allow the tray to cool before removing pastries to prevent deformation and facilitate release.
Wash the tray by hand using a non-abrasive sponge and mild detergent; do not use a dishwasher. Do not use the tray in a microwave oven. To extend the coating life, avoid metal tools and harsh scouring; store in a dry place to prevent surface oxidation.
