GN (Gastro-Norm) pans are standardized-size containers used in professional kitchens for efficient storage, transport, cooking and serving of food. This standardization ensures compatibility with standard equipment such as ovens, refrigerators, heated and cold display units, allowing the same GN pan to be used across different kitchen stations.
GN pans follow international standards, providing universal compatibility with professional kitchen equipment. They are multifunctional — suitable for cooking, storage, transport and presentation — and their standardized sizes enable efficient use of space in refrigerators, shelves and display cases. GN pans are manufactured from materials that are easy to clean and meet food hygiene requirements, such as stainless steel or polypropylene. Options with and without lids are available: uncovered pans are convenient for thermal processing and buffet presentation, while lidded pans protect contents during storage and transport.
Use GN pans directly in convection or steam ovens for cooking and thermal processing, place them in refrigerators or freezers for storage, and insert them into insulated carriers for safe transport while maintaining temperature. Choose uncovered pans for direct heating or buffet presentation and use lidded pans with silicone seals to protect contents, prevent odor transfer and reduce cooling. Remove silicone seals for cleaning and reassemble after drying to maintain hygiene and sealing performance.
For long-term hygiene and sealing performance, remove and wash the silicone seal regularly, avoid sharp tools that could damage the seal or pan surfaces, and choose the appropriate material (stainless steel for high-temperature cooking, polypropylene for lightweight storage) according to your kitchen workflow.
