TEXAS_CLUB BOURBON wood smoking and aging stave chunks are oak pieces cut from bourbon casks, offered in an approximate 0.4 kg pack. These stave chunks are designed to impart oak and bourbon-cask aromas and flavors when used for cold or hot smoking, tank or barrel aging, or when added to grills and smokers for homebrewing, distilling and culinary applications. The product is intended for use with spirits, beer, meats, cheeses and other foods where oak influence and cask-like notes are desired.
Made from seasoned bourbon barrel staves, the chunks deliver concentrated oak, vanilla, and caramel notes characteristic of previously used bourbon casks. Their chunk format provides a balance between surface area and longevity, suitable for repeated smoke sessions or longer contact during aging in tanks or jars. The pieces are dry and ready to use, allowing straightforward dosing in smokers, grills, fermenters or infusion vessels without additional preparation.
For smoking, place a measured portion of chunks in the smoker box, on charcoal, or in a designated wood tray and apply heat according to the smoker or grill manufacturer’s instructions. For cold smoking, use a smoke generator or indirect low-heat method to produce smoke without raising product temperature significantly.
