de Buyer 4708.36 is a single-piece tart mould with a 360 mm diameter and 27 mm height designed for baking large tarts, quiches and pastry bases. Made from thick steel with a straight edge and a removable bottom, the mould provides even heat diffusion and uniform cooking while allowing easy release of baked goods. The PFOA-free PTFE non-stick coating reduces sticking, protects the steel from oxidation and simplifies cleaning. Intended for traditional oven use up to 220°C.
The thick-steel construction reaches and retains high temperatures to promote caramelisation of fruit juices and fillings, contributing to consistent browning. The removable bottom simplifies unmoulding cakes and tarts without damage to the crust. The PFOA-free PTFE coating improves release and cleaning, while the straight edge and shallow profile are suitable for a wide range of sweet and savoury preparations. The mould is lightweight for its size and supplied as a single unit for immediate use.
Before first use and before each subsequent use, lightly grease the mould to ensure optimal release. Line or place the pastry into the mould and press gently to form an even base and edges. For blind baking, use baking weights or beans to prevent puffing and follow your recipe timings and temperatures, not exceeding 220°C. After baking, allow the tart to cool slightly, then remove the outer ring and lift the removable bottom to extract the tart with minimal handling.
Wash the mould by hand using a non-abrasive sponge and warm soapy water; avoid metal utensils or abrasive cleaners that can damage the PTFE coating. Do not place the mould in the dishwasher and do not use in microwave ovens. Store in a dry place to avoid oxidation of uncoated steel edges.
