The Kai Wasabi Black chef's knife features a 15 cm polished stainless steel blade with a hardness of 58±1 HRC and a seamless black handle that fully embraces the blade. Designed in Japan and made in Japan, this knife combines traditional Japanese blade quality with a modern handle construction that prevents gaps where dirt could accumulate. The 15 cm blade length makes it a versatile tool for everyday kitchen tasks.
The polished stainless steel blade offers good edge retention and corrosion resistance while the 58±1 HRC hardness balances sharpness and durability. The black handle is molded to encase the blade entirely, creating a hygienic connection between blade and handle and eliminating joints where food residue might collect. Ergonomic handle shape provides a secure and comfortable grip for extended use.
Hold the knife with a firm, comfortable grip on the ergonomic handle and use a stable cutting board. Use a rocking or slicing motion depending on the task: shorter chopping motions for vegetables and longer smooth slices for meats. Keep fingers clear of the blade path and cut with controlled, even pressure to maintain precision and safety.
