The KAI 6720C cheese knife from the Wasabi Black Series features a 20 cm polished steel blade made from corrosion-resistant 6A/1K6 steel with a hardness of 56 (±1) HRC. Designed as a single-piece knife with a water-resistant black plastic handle enhanced with bamboo powder, it offers durable construction, reliable sharpness and a comfortable grip for regular kitchen use.
The knife combines corrosion-resistant steel and a water-resistant handle that resists everyday wear. Its polished 20 cm blade provides clean, precise slices of various cheeses while the slightly arched blade spine supports controlled rocking and slicing motions. The integrated handle with bamboo powder offers a comfortable, non-slip feel and easy-care handling.
Hold the knife by the ergonomic handle and position the blade against the cheese. Use steady, even strokes for clean slices; for firmer cheeses apply controlled pressure, for softer cheeses slice gently to avoid crushing. The slightly arched spine supports rocking motions when thin or decorative slices are required. Rinse and dry the knife after use to maintain the blade finish.
