Roll out pasta dough to an even thin sheet, place the mold on the dough, add small portions of filling into the cavities, cover with a second sheet of dough and press with a rolling pin over the mold to seal and cut the individual pieces. Remove excess dough from around the mold, carefully invert or tap the mold to release the formed ravioli, and transfer them to a floured tray or directly into boiling water according to your recipe. Apply light, even pressure when rolling to ensure the filling is sealed without tearing the dough.
Use flour or semolina dusting on the mold and dough surfaces to reduce sticking. For consistent results, keep dough thickness uniform and avoid overfilling cavities. After use, rinse gently with warm water and mild detergent, dry thoroughly to prevent water spots, and store flat to protect the cutting edges.
