Choose the appropriate GN size and material for the intended use: stainless steel for high‑temperature cooking and durability, polypropylene for cold storage and lightweight handling. Use uncovered pans for direct thermal processes like baking or heating; use lidded pans for storage, transport and presentation to protect contents and slow heat loss. Remove the silicone seal for cleaning and reassemble after both parts are dry. Follow equipment manufacturer guidelines for oven and freezer compatibility.
For hygienic handling and long service life, clean pans and removable silicone seals after each use according to supplier instructions, avoid abrasive cleaners on seals, and store lids and pans dry. Select silicone‑sealed lids when transport or long-term storage is required to reduce leakage and preserve temperature and aroma.
