Roasting pan Staub 40509-861-0, cast iron, 8.35 L, 30 cm diameter, red
Staub 40509-861-0 is a cast iron roasting pan with an 8.35 L capacity and a 30 cm diameter, finished in red. Built for oven use and slow roasting, the pan measures approximately 310 mm in width and 380 mm in depth. Its heavy-duty cast iron construction provides even heat distribution and long heat retention, supporting consistent browning and gentle braising of meats and vegetables.
The pan’s enameled cast iron body offers superior heat retention and uniform cooking across the surface, which reduces hot spots during roasting. The red enamel finish is resistant to high temperatures and simplifies cleaning compared with bare cast iron. Its generous 8.35 L capacity and round 30 cm cooking area accommodate whole poultry, roasts, and large vegetable portions. Thick walls and a tight-fitting lid (when used) help retain moisture for slow-cooked dishes.
The Staub cast iron roasting pan is heavy compared with thinner metal pans, which can make handling awkward when full. It is less suitable for stovetop tasks that require rapid temperature changes or for transport where its weight and fragility of the enamel may be an issue. For very small portions, its large capacity may be excessive.
Preheat the oven to the temperature recommended by your recipe. Place ingredients in the roasting pan and use a rack if required to elevate meat. For braising, sear ingredients on a compatible heat source if desired, add liquids, then cover and transfer to the oven. Use oven mitts or heat-resistant handles because the cast iron becomes very hot. Allow the pan to cool before cleaning and avoid sudden temperature shocks to preserve the enamel.
Use moderate oven temperatures for slow roasting to take advantage of cast iron’s heat retention. Avoid metal utensils that may damage the enamel; use silicone, wooden or heat-resistant nylon tools. Hand-wash with warm water and a soft brush; dry thoroughly to maintain finish. When storing, place a cloth or paper between stacked items to protect the enamel surface.
