Place the kamado on a stable, non-combustible surface with adequate clearance from buildings and overhead structures. Assemble accessories according to the included instructions. Add lump charcoal to the firebox and light using recommended ignition methods; allow the kamado to preheat to the target temperature. Use the two-zone system and deflector to create direct and indirect cooking zones: place food directly over the charcoal for searing or on the deflected side for indirect roasting and smoking. Monitor internal temperature with a grill thermometer and adjust vents to control airflow and heat. After use, close vents to extinguish coals and allow the unit to cool before cleaning ash and storing.
For best results, season cooking grates before first use, use quality lump charcoal for stable heat, and always follow safety and local regulations for outdoor grilling. Regularly remove ash and inspect seals and gaskets to maintain heat retention and performance.
