The ZWILLING Miyabi 5000 MCD Shotoh knife is a compact precision knife with a 13 cm steel blade designed for fine cutting tasks. Made in Seki with Japanese forging tradition and modern manufacturing methods, this single-piece knife offers a balance of sharpness, edge retention and ergonomic handling for everyday kitchen use.
The Shotoh knife provides precise, clean cuts thanks to its finely honed blade geometry and durable steel. Its ergonomic handle improves control and reduces hand fatigue during repetitive tasks. The compact 13 cm blade gives good maneuverability for delicate work while retaining sufficient length for general prep.
This Shotoh knife is not intended for heavy-duty chopping of large bones or extremely hard ingredients; a cleaver or larger chef's knife is more appropriate for those tasks. Its shorter blade also limits efficiency for cutting very large vegetables or breaking down whole poultry.
Hold the knife with a comfortable grip on the handle and place the non‑dominant hand on the ingredient to guide cuts. Use a rocking or push-cut motion appropriate to the task, keeping the tip and midsection of the blade active for precision.
